My brother turned a year older today! He came over to my house, we hung out with the kids, hung three ceiling fans and baked Chocolate Crinkles. Dad came over for dinner which I made chicken and beef fajitas. For some reason I had an itch to cook and bake today, don't know why. Everything turned out reaaly well, before Eric arrived, I had made browines and a pork tenderloin, YUM! The brownies were supposed to be for his bday, but Elle saw me making them. When they were done she had to have one, which was before Eric arrived.

Anyways, here is the Chocolate Crinkle recipe: Ingredients: 4 eggs, 1 3/4c granulated sugar, 4 oz unsweetened chocolate chips, melted and cooled, 1/2 c cooking oil, 2 tsp baking powder, 2 tsp vanilla, 2 c flour, and powdered sugar. In large mixing bowl beat eggs, granulated sugar, chocolate, oil, baking powder, and vanilla w/electric mixer until combined. Gradually beat in flour, cover and chill dough 2 hrs or overnight or until dough is easy to handle.

Preheat oven to 375. Lightly grease cookie sheet. Shape dough into 1-inch balls. Roll balls into powdered sugar to coat generously. Place balls 1 inch apart. Bake 8 to 10 minutes or until edges are set and tops are dry. Transfer to wax paper to cool.

Elle was in a great mood all day, then when we were making dinner her mood changed 180 degrees. She would not sit with us for dinner, so I put her down in her room. She got in a better mood and came to sit with us. Immediately her mood changed again, so she is not in Eric's bday pic, here it is enjoy!
